The Starless Sea ~ Kat’s Cookie

After both of us having recently read and falling in love with The Starless Sea by Erin Morgenstern, we were over the moon to see the Morgenstern herself had revealed the recipe for Kat’s cookies on twitter. Being eager to a baking post we thought this was perfect timing. Keeping the biscuit recipe the same we decided to add our own unique twist with our decorations.

The ingredients you will need are:

  • 1 Cup Butter or Margarine
  • 1 1/2 Cup Sugar
  • 1 Cup Sour Cream
  • 1 tsp Vanilla
  • 3 Cup Flour
  • 1 tsp Baking Powder
  • 1tsp Salt
  • 1/2 tsp Baking Soda
  • Topping: 1 tsp Cinnamon, 1/2 Cup Sugar
  • Our Alternative Topping: Rolling Fondant, Decorating Cake Pens

Set oven to 180 Celsius / 350 Fahrenheit.

  1. Cream together the butter and sugar.

2. Add the 2 eggs and mix.

3. Add the sour cream and mix until well combined.

3. Stir in the vanilla essence.

4. Combine the flour, salt, baking powder and baking soda.

5. Gradually add in the dry ingredient mixture.

6. Fold until well combined.

7. Spoon mixture into small balls on to a greased tray.

8. Allow ample room for the biscuits to spread whilst cooking.

9. Mix the toppings of cinnamon and sugar together and sprinkle each dollop of mixture thoroughly.

10. Bake for 10 minutes or until the edges are golden. They will look slightly under done in the middle but this will change as they cool.

11. This is our added twist to the recipe. Whilst waiting for the biscuits to cool, roll out some white fondant icing.

12. Cut icing into thin circles slightly smaller than the biscuits.

13. Allow to somewhat harden so you can draw on them.

14. Decorate with your chosen design, we went with bees as they are such a focal point within the book and the cover.

15. Then using a little bit of water on the back of the icing stick to the top of the now cooled biscuit.

And voila… we know they are not perfect but isn’t that the point of home baking. All that matters is that we had fun making them and that they taste good, which they do. We enjoyed ours with a hot cup of tea.
